Ready for another quick and simple soup recipe? (Courtesy of allrecipes.com) This one is chalked full of flavor from beef bouillon and is oh so delicious. Please excuse the picture quality, sometimes my camera has lighting issues when it comes to food. Anyway, serve this soup up with grilled cheese sandwiches for a change of pace and you've got yourself a hearty meal!
INGREDIENTS
1 pound cubed beef stew meat
1 cup chopped onion
1 cup chopped celery
1/4 cup beef bouillon granules
1/4 teaspoon dried parsley
1 pinch ground black pepper
1 cup chopped carrots
5 3/4 cups water
3/4 of 1 (16 oz) bag of egg noodles
DIRECTIONS
In a medium saucepan, bring water to boil and cook egg noodles according to package directions. NOTE: I'm not sure of the exact amount of egg noodles I poured in, but I just looked at the bag and estimated that I used 3/4 of the 16 oz. bag.
Meanwhile, in a large saucepan over medium high heat, saute the stew meat, onion and celery for 5 minutes, or until meat is browned on all sides.
Stir in the bouillon, parsley, ground black pepper, carrots, and water. Bring to a boil then reduce heat to low. Add the cooked egg noodles and and simmer for 10-15 minutes.
On October 14, 2010 my husband and I celebrated our 2 month anniversary. We were sitting on the couch, after work and I turned to him and said, "We've been married 2 months and I've cooked something different every night!" He congratulated me and asked, "Do you think you could do it for a year?" Ever competitive, I smiled at the challenge and emphatically said, "Yes". This blog is to document the last 10 months of my challenge. The deal is, I have to make one new main dish each day, for either breakfast, lunch, or dinner. I have no formal training in the kitchen, but I can follow a recipe and I love variety and trying new things in life, including food. My husband may think I cook for him because I love him, and yes this is true. But let's be honest, I love food just as much as he does! I am obviously in need of good recipes that fit a newlywed's budget, so please share some of your recipes in a comment! I hope you enjoy the next 10 months as much as I do and I hope that it will inspire you to spend a bit more time preparing a well balanced meal to share as a family each night and to get out of that comfort zone and try something new!
